Meandering Rant: “I Want It My Way” by Patty Pino

Book Report: “Chicken Soup for the Generation X Soul” by Rob

Music Segment: The Blues of Gregg Allman, featuring “Checking Out My Baby”

Nonnie’s Chicken Soup Recipe (including the note from my Mom):

1 pkg of chicken legs, washed and wrapped in cheesecloth
3-4 stalks of celery, chopped
3-4 carrots, chopped
1 large onion, chopped
8 cups of water
6-8 cubes chicken bouillon
Salt and pepper to taste
2/3 cup acini pepe or rice
Bring all ingredients to a boil and simmer for 2 hours.
Remove chicken; separate from bone and return to pot.
Add pasta or rice and bring to second boil.
Turn off and cover.
In 15 minutes, pasta or rice should be cooked;
If not, slow simmer until done.
NOTE FROM MOM: I’ve used leftover chicken pieces, whole, boneless, skinless breasts, substituted canned broth for the bouillon, used more or less water, or pasta. It’s a rustic recipe, so just relax and go with your gut about what might work with what you have on hand. The important thing is the combination of vegetables and the time to simmer. Enjoy!!
